How does fructose become allulose?

The conversion of fructose to allulose under industrial conditions mainly occurs by enzymatic bioconversion .

The essence of the process is that fructose – which is a simple sugar (monosaccharide) – is converted into allulose (also known as D-allulose, D-psicose) with the help of a special enzyme called D-psicose-3-epimerase (or fructose isomerase).

Steps of the process

The starting material usually used is refined starch, which is first broken down into glucose and then converted into fructose.

The resulting fructose is then treated via biocatalysis, i.e. an enzymatic reaction.

The key enzyme performing the conversion is D-psicose-3-epimerase, which carries out epimerization at the C-3 carbon atom of fructose, thus creating allulose.

After enzymatic conversion, the solution is purified and the allulose is separated from the remaining fructose and other components.


This process is used in industrial practice because only very small amounts of allulose can be obtained through plant extraction, and chemical synthesis is expensive and complicated. Enzymatic bioconversion is therefore the most economical and widespread method for producing allulose.
