The figure shows how blood sugar levels change after eating different types of food.

Severe increase in blood sugar levels ("strong rise in blood sugar")

A rapid and high rise in blood sugar occurs, followed by a sudden drop (low blood sugar - "Unter-Zuckerung").

This is most common when consuming rapidly absorbed carbohydrates (e.g. sugary foods).

Moderate blood sugar increase ("mittlerer Blutzuckeranstieg")

It shows a less intense, more moderate rise and slower fall, which is typical of foods containing more complex, slower-absorbing carbohydrates.

Slight increase in blood sugar ("geringer Blutzuckeranstieg"):

Carbohydrates consumed with protein and fat result in the most stable blood sugar levels, as protein and fat slow down the absorption of carbohydrates.
